About the Recipe

I’ve made Chili many times over the years, using different recipes. I rate this one as one of my favorites because it’s quick and easy, and everyone raved of how good it was…. I did add one ‘secret’ ingredient that always elevates any recipe to the next level: portuguese ‘chouriço’!! Let me clear, the chili without the ‘chouriço’ would come out Good, but with the added ‘chouriço’ comes out Great!! ❤️ Try it (with or without chouriço) and let me know if you agree!

Ingredients

  • 1 pound ground Beef, 93% lean

  • 1/2 portuguese chouriço, diced (optional)

  • 1 tsp kosher salt, plus more to taste

  • 1/2 small onion, chopped

  • 1 medium red bell pepper, chopped

  • 1 15 oz can reduced-sodium black beans, rinsed, drained

  • 1 10 oz can diced tomatoes (mild with green chilies, drained if you’d like)

  • 1/2 cup canned tomato sauce

  • 3/4 cup light beer such as corona light, (or swap for 3/4 cups reduced-sodium beef broth)

  • 1 tsp cumin

  • 1/2 tsp chili powder

  • 1/2 tsp paprika

  • 1/4 tsp garlic powder

  • black pepper, to taste

    Optional Toppings:

Chopped red onions, cilantro leaves, lime wedges, sour cream, cheddar, avocado

Preparation

  1. Heat a large pot on medium-high heat, brown the beef (and chouriço, if using) and season with salt. Cook breaking beef into 3/4-inch crumbles and stirring occasionally, 5 minutes.

  2. Add the onion and bell pepper and cook 1 to 2 minutes. Add the beans, tomatoes, tomato sauce, beer, and spices.

  3. Cover and cook low heat at least 60 minutes to blend the flavors, stirring occasionally. Taste for salt and adjust as needed, serve with toppings, as desired.
